Only at the end of the curing process, if all regulations and requirements set by the Parma Ham Consortium have been met, can the hams be branded with the official certification mark – the Parma Crown. Only then can the name Parma Ham be attributed to the finished product. Any hams not meeting every regulation can only be sold as generic prosciutto.
